I love to cook. I think I was a chef in a past life. Since moving to New York 6 years ago, I have been hosting a Pre-Thanksgiving Thanksgiving at my apartment with all my friends. The menu is the same each year and I’ve pretty much perfected the recipes. Here are some of my favorites and probably what I will be cooking this year as well.
Thanksgiving Menu: Lemon and Rosemary Roasted Chicken, Jasmine Rice, Collard Greens seasoned with Turkey, Candied Yams, Baked Macaroni and Cheese, Dill and Garlic Red Potato Salad and Peach Pie and Apple Pie.
If you want to wow your guest here are two quick pie recipes that will have your guests thinking you are Julia Childs.
Peach Pie is so freaking easy to make and delicious. Its a great alternative to Peach Cobbler which I don’t really care for.
PEACH PIE
Incredients: Two Pre Rolled Pie Dough (Try Pillsbury Brand), 2.5 Jars of Pre Cut/Sliced Peaches, 1/3 Cup of Flour, 1/2 Cup Sugar, 1/2 Cup Brown Sugar, A few dashes of cinnamon, 1/4 Cup of Butter, 1 teaspoon of baking powder, a splash of vanilla extract
You will need a 9 inch Pie Pan (I love the glass one)
Directions:
Heat oven to 350 degrees
Take pie crust and unroll it into the bottom of the pie pan, create cute edges but making it squiggly
Pour the peaches into a drainer and let all the liquid drain out. You want the peaches as dry as possible.
In a separate bowl mix flour, sugar, cinnamon, baking powder and butter into a crumb mixture
Line the bottom of the crust with peaches then sprinkle the crumb mixture on top, then again make another layer of peaches and again top it with more of the crumb mixture, continue until the pie crust is full then drizzle vanilla extract over peaches
Take the other roll out pie dough and unroll it on top of the pie pan, mesh the edges of the top and bottom crust together and cut four slits in the top of the pie crust
To create a nice flaky top crust take one egg white, add a tablespoon of cinnamon and sugar and mix and then lightly glaze the top pie crust with the mixture.
Bake for 45 minutes or until crust is golden
This recipe is super easy! Top it with a scoop of vanilla ice cream and enjoy!
